Undoubtedly, tourism and hotel management are among the sectors most affected by the COVID-19 pandemic. Thus, the issue of “Cost Management in Hotels in the COVID-19 Process” was discussed within the scope of the “Pioneers of the Industry” seminar series initiated in cooperation with the Near East University Tourism Faculty and Tourism Research Center.

The chairman of the session was Near East University Faculty of Tourism Dean Prof. Dr. Tülen Saner and Limak Cyprus Deluxe Hotel General Manager Mehmet Mülayim attended the seminar as a speaker. Mehmet Mülayim, who gave information about the sector to Gastronomy and Culinary Arts and Tourism and Hotel Management students, shared information about the effects of the pandemic period on hotel management. Mülayim said that during the coronavirus (COVID-19) pandemic, some applications that are mandatory in hotels may become permanent. According to Mülayim, cost analysis will determine which applications will become permanent.

Stating that the hotels took different measures to protect the health and safety of their guests and employees and to cope with the threats in this process, Limak Cyprus Deluxe Hotel General Manager Mehmet Mülayim pointed out that the measures taken by the hotels in this difficult period will also be reflected in their strategies to return to normal.

Mehmet Mülayim: "In open buffet hotels, the food and beverage costs were greatly reduced due to the fact that the meals started to be served by the staff as a result of the pandemic."
Reminding that some changes have been made in the daily operation of the hotels due to pandemic conditions, Limak Cyprus Deluxe Hotel General Manager Mehmet Mülayim said that the sector should make cost analyzes by taking into account all of the workforce, food and beverage expenses, other expenses and fixed expenses in order to get through this period. Mülayim, reminding that the guests are served by the staff instead of buying the meals themselves, pointed out that this practice reduces the food and beverage costs. The most important cost increase was experienced in the cleaning department. “Increasing the frequency of cleaning, deep cleaning and disinfection have added an unaccounted cost for hotels,” he said. Stating that the decrease in the occupancy rate of the hotels caused a decrease in revenues, Mülayim said, “The fact that air conditioners are not used in this period reduced the energy cost of the hotel. In addition, unnecessary expenditures have been reduced to ensure profitability ”.

Prof. Dr. Tülen Saner: "The Sector Pioneers seminar series has turned into a discussion platform for the industry."
Near East University Tourism Faculty Dean Prof. Dr. Tülen Saner said that with their regular “Industry Pioneers” seminars, they provide an opportunity for their students to see the dynamics of tourism from within, while also creating a discussion platform for the industry. Prof. Saner expressed her gratitude to Limak Cyprus Deluxe Hotel General Manager Mehmet Mülayim, who attended the seminar they held as a speaker, and added that the seminar series will continue.
